Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear until golden brown, about 5-6 minutes per side, or until internal temperature reaches 165°F (74°C). Transfer the chicken to a plate and cover with foil to keep warm.
  3. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
  4. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan (this is where the flavor is!).
  5. Reduce heat to medium and add the heavy cream, stirring continuously. Bring the sauce to a gentle simmer.
  6. Add the parmesan cheese and stir until melted and the sauce starts to thicken, about 2 minutes.
  7. Stir in the sun-dried tomatoes and red pepper flakes (if using), and cook for 1-2 minutes to release their flavors into the sauce.
  8. Add the fresh spinach to the sauce and stir until it just begins to wilt, about 1 minute.
  9. Return the chicken to the skillet, nestling it into the sauce. Reduce heat to low and let chicken simmer in the sauce for 2-3 minutes to reheat and absorb flavors.
  10. Taste the sauce and adjust seasoning with salt and pepper if needed.
  11. Garnish with fresh chopped basil just before serving.
